🠴 Evynnis tumifrons 🠶

學名:Evynnis tumifrons 別稱:盤仔魚、紅鯛、紅加志、白鯛、海鯛,屬鯛科(Sparidae)真鯛屬(Evynnis)魚類。常見於台灣西部、東海及日本近海,為暖溫性底棲魚,喜棲於沙泥質海底。其體形側扁呈橢圓形,體色粉紅至淡紅色,頭頂略隆起,尾鰭後緣微凹,外觀近似真鯛 (Pagrus major),但體型較小且頭部隆起明顯,因此在漁市上俗稱「盤仔魚」。

常見種類:主要為隆頭鯛(Evynnis tumifrons),偶有混稱真鯛(Pagrus major)或赤鯮(Dentex hypselosomus)。

性味歸經:性平,味甘,歸脾、胃、腎經。

功效:有補氣養血、健脾開胃、益精強身之效,古人稱其肉「補中益氣、潤澤肌膚」,可用於體虛乏力、氣血不足、病後調養。

應用:肉質細緻、富彈性,適合清蒸、鹽烤、紅燒、煮湯等烹調方式。其魚頭與魚骨亦常用於高湯料理,如鯛魚湯、味噌鍋底。在台灣漁港常見,為年節祭祀與高級宴席常用魚品。
