🠴 比目魚 🠶

學名:Paralichthys olivaceus
別稱:鰈魚、扁魚、左口魚、比目魚,屬鰈形目鰈科魚類。其體扁而廣,雙眼位於身體同側,多偏左側,乃其特徵。比目魚常棲息於沙質或泥質海底,分布於台灣沿岸、日本、韓國及中國東海、南海海域。肉質潔白細嫩,脂肪含量適中,味道清甜鮮美,是高級食用魚。

常見種類:台灣常見的包括星鰈 (Verasper variegatus)、大比目魚 (Reinhardtius hippoglossoides)、日本鰈 (Paralichthys olivaceus)等。

性味歸經:性平,味甘鹹,歸脾、胃、腎經。

功效:有補氣養血、健脾益胃、潤膚養顏、強筋骨之效。古籍《本草綱目拾遺》記載其肉可養中益氣,補虛勞。魚皮膠質豐富,有助養陰潤燥、調理皮膚,適合體弱或術後病人食用。

應用:比目魚可清蒸、煎烤、紅燒、味噌煮或涮火鍋,肉片常用於壽司與刺身料理;魚骨可熬湯滋補,魚皮可製膠原料理。其味鮮而不膩,為日式與台菜中常見的高級魚材。
