🠴 黑大比目魚 🠶

學名:Reinhardtius hippoglossoides 別稱:黑比目魚、格陵蘭比目魚、扁鱈、黑鰈、深海大比目魚、Black halibut(英);商品市場常稱為「黑鱈魚」(但與真正的鱈魚 Gadus spp. 無直接關係)。

常見種類:屬於鰈形目鰨亞目,黑大比目魚主要分布於北大西洋及北冰洋深海水域,與太平洋黑大比目魚(Reinhardtius sp.)相似,但前者在商業漁業中較常見。

性味歸經:性平味甘;入脾、胃經。具滋養身體、補虛養氣之性,且肉質柔軟細膩,適合老人、兒童及術後調理食用。

功效:含豐富 Omega-3 脂肪酸(EPA、DHA),有助心血管保護與腦部健康,富含蛋白質、維生素 A、D、E 以及硒、鎂等礦物質,含量較高的天然脂肪使肉質滑嫩、補益性足,需注意:大型深海魚類可能有較高汞累積,建議適量攝取、孕婦與幼童需控制頻率。

應用:脂香明顯,肉質細嫩偏油脂厚重,是高端料理的常見食材。適合烤、煎、煙燻、味噌醃製等方式;尤其以日式「味噌黑鱈」最為知名。魚皮富膠質,煎烤後彈滑可口;魚頭與中骨可煮湯。因風味濃郁,適合白酒、奶油及柑橘類提味搭配。亦常見於歐美與日本的壽司、排餐與高級宴席。
