🠴 多寶魚 🠶

多寶魚(學名 Scophthalmus maximus),別稱杜寶魚、大菱鮃、歐洲比目魚、左口魚,屬於鰈形目(Pleuronectiformes)鱸比目魚科(Scophthalmidae)。原產於歐洲北大西洋沿岸,現廣泛養殖於中國沿海與台灣北部。其體呈近圓形而扁平,雙眼位於體左側,體色褐灰帶斑,能依環境改變顏色以保護自己。多寶魚肉質潔白細緻、少刺、膠質豐富,屬高檔食用魚。

性味歸經:性平,味甘、微鹹,歸脾、胃、肝經。

功效方面,多寶魚具補氣養血、健脾和胃、潤膚益精之效,《本草綱目拾遺》記載「魚甘平,補虛益氣」,能增強體力、促進食慾並助消化。其肉含優質蛋白與不飽和脂肪酸,有助維持血脂平衡。

應用上,多寶魚可清蒸、香煎、紅燒、火鍋涮食,尤以清蒸最能呈現鮮甜風味。魚骨與頭部可熬成白湯,味濃鮮美,適合養身調理;魚皮富含膠原蛋白,常用於美容與養顏膳食。
