🠴 Seriola lalandi 🠶

學名:Seriola lalandi 別稱:黃尾魚、黃尾鰤、鰤魚、油鰤、青甘、油甘魚,屬於鱸形目(Perciformes)鰤科(Carangidae)鰤屬(Seriola)。體型呈紡錘形,兩側略扁,體色青灰帶金黃光澤,側線明顯,尾鰭分叉呈新月形,為優良的洄游性魚類。分布於西太平洋、南太平洋及印度洋沿岸,在台灣、日本與澳洲海域皆常見,為高經濟價值食用魚。

常見種類:包括日本鰤(Seriola quinqueradiata)、大鰤(Seriola dumerili)及黃尾鰤(Seriola lalandi)三種常作比較,其中黃尾鰤肉質結實、油脂適中。

性味歸經:性平,味甘,歸脾、胃、腎經。

功效:有補氣養血、強壯筋骨、益腎健脾之效。古法認為黃尾魚能補中益氣、助陽壯體,適合氣血不足、疲倦虛弱者食用。魚肉富含優質蛋白質與不飽和脂肪酸,營養豐富。

應用:常見於刺身、生魚片、煎烤、紅燒或味噌煮等料理;魚頭亦可熬湯。肉質細膩、脂香濃郁,是日本壽司與高級魚料理的重要食材之一。
