長扁蒲(學名 Lagenaria siceraria var. elongata),為葫蘆科(Cucurbitaceae)葫蘆屬一年生蔓性植物。別稱有長蒲、菜蒲、蒲仔、長葫蘆等,為臺灣與華南地區常見的蔬菜瓜果。其果實細長如棒,外皮淡綠或深綠,表面光滑,果肉潔白柔嫩,籽少而味清。與球型扁蒲(Lagenaria siceraria var. globosa)同屬,主要以形態長而直為特徵。

常見種類依果形、皮色及用途區分,如青皮長扁蒲、白皮長扁蒲、嫩果食用型、老熟器用型等。嫩果供食用,老熟果可製為器具或葫蘆藝品。

性味歸經:性涼,味甘、淡,歸脾、胃、大腸經。

功效方面,具清熱化痰、利水消腫、解毒除煩、通便潤膚之效,《本草綱目》載其「除熱下水氣」,古用以治小便不利、浮腫與暑熱煩渴。

應用上,多以嫩果入菜,常見於炒食、煮湯、燉肉、煮粥等,如扁蒲蝦米湯、扁蒲豆腐湯,風味清甜爽口,是夏季常見的家常蔬菜。
