花扁蒲(學名 Lagenaria siceraria var. clavata),別稱花蒲、蒲瓜、扁蒲、長蒲瓜,屬葫蘆科(Cucurbitaceae)一年生蔓性草本植物。原產印度,現廣泛分布於亞洲熱帶與亞熱帶地區,臺灣常作為夏秋兩季蔬菜栽培。依果形可分為長形扁蒲、花皮蒲瓜、白皮蒲瓜等類型,果皮呈淡綠或花斑色,肉質細嫩。

性味歸經:性涼,味甘、淡,入肺、胃、小腸經。

功效方面,花扁蒲具有清熱化痰、利水消腫、解毒潤燥、通乳排膿之效。古籍《本草綱目》記載其「利水道、治腳氣、消腫滿」,民間多用其果實或藤蔓入湯飲,以清暑利尿、化痰止渴。種子亦入藥,稱為「蒲瓜子」,具清熱排膿之功。

應用上,花扁蒲為常見蔬菜,可煮湯、炒食或燉肉,質地柔軟清甜,適合搭配蝦米、豆腐、排骨等食材。嫩果可涼拌、老熟後可曬乾貯藏。除果實外,花及嫩梢亦可食用,具消暑清熱之功。
